Tonight’s meatless dinner: pão de queijo

My favorite part of those high dollar Brazillian chursacurria places is the pão de queijo cheese bread.  Yum!

I looked at many, and ended up using this one. Used the amount of parmesan I had and made up the remainder of 4c of cheese with queso fresco.

Made some on an insulated pan (left) and mini muffin pan (right).  I like the shape of the muffin ones but the flavor of the flat ones better.  Maybe I could get the flattened pans one rounder by doubling the baking powder.

It’s ovo-lacto, for those of you keeping track.
